Seasonal variations in honey production and floral sources may result in variations in the color, flavor, and aroma of the honey throughout the year. Pure raw unpasteurized honey may crystallize over time due to its high glucose content and the natural process of sugar crystallization. Crystallization is faster in honeys rich in glucose (citrus, cherry, sunflower), however, it does not occur or develops late and incompletely in honeys rich in fructose (acacia, chestnut, honeydew). Crystallization is a natural and reversible process that does not affect the quality or taste of the honey and can easily be reversed by gently heating the honey in a warm water bath.
