Crystallization is faster in honeys rich in glucose (citrus, cherry, sunflower), however, it does not occur or develops late and incompletely in honeys rich in fructose (acacia, chestnut, honeydew). Crystallization is a natural and reversible process that does not affect the quality or taste of the honey and can easily be reversed by gently heating the honey in a warm water bath.
